Sandi Sumner Hendry was born and raised in Orem, Utah. She has always stood out in a crowd. Hendry graduated from Brigham Young University with a degree in Education & Business and was a school teacher for 30 years. After retiring from school teaching, she worked in HR and Personnel for Mountain View Title, a company she owned and operated with her husband, Mike.

In 2009, she added a third career – owner and founder of Minky Couture. That year, Hendry’s daughter became ill and was hospitalized for several months, and asked for a “big baby blanket” to snuggle up with during her recovery. Hendry had a hard time finding the perfect cozy blanket for her daughter.  It was at this time that she created the first adult-size Minky Couture blanket, and Minky Couture was born!

Minky Couture has now grown to be a popular brand of blanket, not only in Utah, but all over the United States and the world. Hendry has now opened six retail stores throughout Utah with over 250 employees. Hendry has received much recognition and many awards, including the Ernst & Young Entrepreneur of the Year in 2019 and the Women in Business ATHENA Award in 2020 from the Davis Chamber of Commerce. Minky Couture has also repeatedly achieved the “Best of State” award.

Through Minky Couture’s “Heart of Minky” program, they donate thousands of Mini Minky blankets to NICUs nationwide. These little blankets bring comfort and love to these tiny babies who are born earlier than expected and to their families who have something comforting and beautiful to provide for their babies.

Nordic Valley, located in Eden, Utah, opened in 1948 as Silver Belle Ranch and was purchased by MCP in 2019 with the mission of making skiing and snowboarding accessible and affordable to all. How? With free skiing for kids 12 and under, day passes starting at $9, etc. In January 2024, our beloved “barn” burned down, taking with it all critical amenities. Against all odds, we reopened for our community in only 3 days. Nordic Valley embodies resilience and we are proud to be here for our community and give people the freedom to ski.

2025 Nominees

When John and Jamie Larsson, owners of DayBreak Senior Services, first encountered‬
‭ the concept of an “Adult Day Care Center,” they were immediately drawn in. Seeing‬
‭ firsthand the gaps in affordable, quality senior care options in Utah, they envisioned a‬
‭ new model that could truly support older adults and their families. DayBreak Senior‬
‭ Services was created to meet this need with a blend of innovation, community‬
‭ connection, and compassionate care.‬
‭ In 2018, the Larssons transformed a cherished local landmark—the Edgewood‬
‭ Reception Center, a venue that has hosted over 5,000 weddings since 1965—into a‬
‭ Senior Day Program facility. By preserving much of the original architecture, DayBreak‬
‭ has become more than just a care facility; it’s a place steeped in community history and‬
‭ memory, where some of our participants were even married. This personal connection‬
‭ to the facility fosters a comforting, familiar atmosphere for our participants and their‬
‭ families, creating a seamless blend of past and present.‬
‭ The innovative model at DayBreak provides supervised daytime care, offering‬
‭ participants essential social and health services while giving family caregivers‬
‭ invaluable respite. By focusing on activities that stimulate cognitive and physical‬
‭ abilities, DayBreak has observed improvements in participants’ mood and behavior.‬
‭ These benefits not only enhance their quality of life but often help delay or avoid the‬
‭ need for long-term care placement, allowing older adults to stay in their homes‬
‭ longer—an outcome we know is crucial to aging adults and their families.‬
‭ What sets DayBreak apart is its highly personalized approach. With a 1:6‬
‭ staff-to-participant ratio, every participant receives the attention they need to feel‬
‭ engaged and valued. DayBreak offers a full day of care, including nutritious meals and‬
‭ varied, individualized activities, for less than $1,800 per month—making it an accessible‬
‭ option in comparison to assisted living or in-home care, which can cost up to $7,000‬
‭ monthly. As an approved Medicaid vendor and a partner with both Weber and Davis‬
‭ County’s Caregiver Support Programs, DayBreak ensures that the most vulnerable‬
‭ seniors have access to these critical services.‬
‭ DayBreak Senior Services stands out not just locally, but statewide, for the specialized‬
‭ support we offer to Veterans. As the‬‭ only‬‭ VA-contracted‬‭ adult day care center in Utah,‬
‭ DayBreak provides unique access for veterans enrolled with the VA. Through our‬
‭ program, veterans can request a referral and access our services at no cost.‬
‭ Additionally, our care is non-service-connected, allowing even more veterans to benefit‬
‭ from this essential support.‬
‭ With wait times at the local veterans’ home ranging from two to five years, our program‬
‭ offers a timely, potentially life-saving alternative for veterans and their caregivers.‬
‭ In Utah, where the aging population is growing rapidly, DayBreak Senior Services is‬
‭ proud to be the only remaining senior day facility in Northern Utah post-pandemic.‬
‭ We’re not just a care facility; we’re a community anchor, a hub for joy, purpose, and‬
‭ shared experiences.‬
